Ingredients: 2 tsp olive oil
2 onions, chopped (about 2 cups)
2-1/2 lbs bite-size chicken breast pieces
1 tbsp bottled minced garlic
1 tbsp worchestershire sauce
4 oz Greek/black sliced olives
1 tbsp oregano
1 tbsp basil
1 - 14oz can stewed tomatoes
1 - 8 oz can tomato sauce
1 - 14oz can plain artichoke hearts, drained & cut into pieces
8-16 oz uncooked orzo pasta
Crumbled feta cheese
Directions: Heat oil, add onions, saute until nearly soft, add chicken pieces and stir fry until chicken has cooked through. Add remaining ingrediants, stir well. Simmer chicken & sauce while orzo cooks.
Cook up to 16 oz orzo for use with leftover sauce. Drain orzo, top with chicken sauce, add crumbled feta.
