Easy & flavorful.
2 tsp olive oil
2 onions, chopped (about 2 cups)
2-1/2 lbs bite-size chicken breast pieces
1 tbsp bottled minced garlic
1 tbsp worchestershire sauce
4 oz Greek/black sliced olives
1 tbsp oregano
1 tbsp basil
1 - 14oz can stewed tomatoes
1 - 8 oz can tomato sauce
1 - 14oz can plain artichoke hearts, drained & cut into pieces
8-16 oz uncooked orzo pasta
Crumbled feta cheese
Heat oil, add onions, saute until nearly soft, add chicken pieces and stir fry until chicken has cooked through. Add remaining ingrediants, stir well. Simmer chicken & sauce while orzo cooks.
Cook up to 16 oz orzo for use with leftover sauce. Drain orzo, top with chicken sauce, add crumbled feta.
