Servings: 12 Comments: So easy and delicious if you like ginger.
Store these in a tight container and add a slice of apple to the container if needed to keep these chewey and not too hard.
Ingredients: 1 cup flour
½ teaspoon baking soda
½ teaspoon cream of tartar
½ teaspoon ground ginger
1 stick butter cut into small pieces
2/3 cup packed dark brown sugar
1 tablespoon golden syrup
¼ cup sultanas or golden raisins
2 tablespoons diced candied ginger
2 teaspoons sugar
Directions: Sift together first 4 ingredients. Add butter and blend until like meal. Stir in brown sugar, syrup, sultanas, and candied ginger. Press mixture into 8-9 inch round cake pan. Sprinkle on sugar. Bake at 325? for 35-40 minutes until knife comes out of center clean. Cool 10 minutes. Cut into wedges and put on a rack to dry.
