Ingredients: 2 pounds cubed beef chuck
3 medium onions, chopped
1 teaspoon cumin
1 teaspoon allspice
2 teaspoons oregano
4 cloves crushed garlic
½ cup water
24 ounces canned (or fresh) Roma tomatoes, chopped
2-½ cups beef broth
3 tablespoons cocoa (or experiment with Mexican chocolate & sugar)
3 teaspoons chili pepper (sweeter, not so hot)
Garnish with cheddar cheese, Mexican cheese, fresh chopped cilantro. Tortillas as preferred.
Directions: Bring first seven tems to a boil in a 5 quart Dutch oven or other heavy pot. Cover and simmer 1/2 hour. Uncover and boil off liquid. Scrape pot with wooden spoon & add another 1/2 cup water. Repeat.
Add the remaining ingredients. Boil, then simmer uncovered for 45 minutes.
Garnish with cheddar or Mexican cheese and fresh cilantro.
