PEAPOD CHICKEN SALAD

Easy to make, and everyone likes it!

Ingredients:
2 whole deboned chicken breasts, cut in bite-sized pieces
½ cup dry small pasta rings
2 tablespoons vegetable oil
1 teaspoon minced garlic
2 teaspoon tamari sauce
½ teaspoon salt
1 package frozen peapods (or 3/8ths lb. fresh)
½ cup sliced green onions
½ cup salad dressing
3 tablespoons tamari sauce
½ pound salted cashew nuts

Directions:
Cook pasta rings. Set aside to cool.

Heat oil & garlic, add chicken and stir fry about 2 minutes. Add 2 teaspoons of tamari sauce and ½ teaspoon salt & stir-fry another 2 minutes until chicken turns white. Remove chicken to cool.

Blanch peapods; drain, rinse with cold water. Cut in half & add to pasta, with chicken, onions, and salad dressing mixed with 3 tablespoons tamari sauce.

Add cashews and mix. Cool before serving.
