Servings: 6-8 servings
2 lbs. red potatoes (about 8 medium...do not peel)
¼ cup chopped garlic
1 tablespoon oregano
1 teaspoon salt
1 cup romano (or parmesean) cheese
1 cup (2 sticks) butter, softened
Wash potatoes and place in a large saucepan. Cover with cold water. Over medium heat bring water to a boil. Reduce heat to low and continue cooking until potatoes are very soft.
Transfer potatoes to a large mixing bowl and add garlic, oregano, salt, cheese and butter. With a potato masher, mash until all ingredients are incorporated.
