BETH'S POTATO CASSEROLE

For a printer friendly version of this recipe, click here

Servings: 8 or so

Comments:
This tastes a lot like freshly mashed potatoes (maybe better!--see ingredients), but it is a lot easier to make for large holiday dinners because it can be made ahead of time.

Ingredients:
9 large potatoes
1/3 to ½ cup milk
1 8-ounce package cream cheese
1 8-ounce carton sour cream
2 teaspoons onion salt (we substituted for this with salt, pepper, and minced, browned garlic--or use garlic powder--but not a lot)
Butter
Paprika

Directions:
Cook potatoes. Drain and mash, adding milk. Beat in cheese, sour cream, and salt and pepper. Put in greased, large, oblong pyrex baking dish. Dot with butter and sprinkle with paprika. Can be made the night before and refrigerated. Bake at 350 degrees for 45 minutes to 1 hour.
