SPINACH CHEESE CASSEROLE

Cambridge House was Glenn's home from 1973 to 1978, and home to at least a dozen other people at different times during those years.

Shared dinners were an important part of Cambridge House, and this dish was a frequent feature at the evening meal. We wanted to eat quick but healthy meals, and this one fits the bill.

It is EASY, and when combined with a waldorf salad or shredded carrot/apple/raisan salad, and maybe buttermilk bisquits out of a box, it is a really good complete meal. The source of this dish is lost in the mists of time, but it could easily be from Adelle Davis or Anna Thomas, because those are cookbooks we used.

Ingredients:
6 large eggs
1 package frozen chopped spinach
16 ounces cottage cheese
2 cups shredded cheddar cheese
Dash nutmeg
Salt and pepper to taste

Directions:
Cook spinach and drain well. Beat eggs and add cottage cheese, shredded cheddar, and spinach. Add seasonings. Bake uncovered in an oblong 9 by 12 inch casserole dish for 45 minutes at 350°.
