SPRING VEGETABLE COUSCOUS

Ingredients:
1-½ cups degreased chicken stock or broth
1 cup couscous

½ cup finely diced radishes
¼ cup thinly sliced green onions
1 plum tomato, seeded and diced
1 tablespoon olive oil
Salt and freshly ground pepper

Directions:
Bring stock to boil in heavy small saucepan. Pour over couscous in medium bowl; do not stir. Cover couscous and let stand 10 minutes.

Add radishes, green onions, tomato and oil to couscous and fluff with fork to combine. Season with salt and pepper. Serve warm.
