Servings: 4 Comments: The waiter at Taste of India told me all the ingredients, and I didn't get it exactly right... but it is pretty close to theirs. -Tastiest curry in months around our house.
Ingredients: 1 tbsp butter
1 small onion chopped
3 garlic cloves, chopped
1.5 lb of Lamb- cubed
1 can coconut milk
1 tsp coriander leaf (dried cilantro)
1/2 tsp cayenne pepper
2 tbsp yellow curry powder
1/2 tsp saffron
Salt and pepper to taste
1 can small, young peas
Directions: Melt the butter in a pan and add the onion and garlic. Sizzle on medium until browned then run the heat to med-low and start adding spices. Hold out the salt and saffron. After the spices have sputtered for about 5 minutes, add the lamb cubes and brown on all sides. Then add the saffron and salt and the can of coconut milk. Turn the heat to simmering and let it do just that for an hour or more. Hour and a half is good, too. Serve over basmati rice with peas stirred in or as a colorful garnish.
