Servings: 6 Comments: Salsa makes about 4 cups, which would serve up to 8 people. The salsa is also good on grilled chicken or pork chops.
Ingredients: 6 6-ounce swordfish steaks
2 tablespoons olive oil
Salt and pepper, to taste
Tropical Fruit Salsa
1 red bell pepper, seeded, diced
1 yellow pepper, seeded, diced
¾ cup ½-inch peeled papaya
¾ cup ½-inch pieces peeled pineapple
½ medium-sized red onion, diced
2½ tablespoons fresh lime juice
2 tablespoons jalapeno jelly (or substitute 1 tablespoon sugar)
2 tablespoons vegetable oil
1 medium jalapeno chili, seeded, minced
1 tablespoon minced fresh cilantro
Directions: Heat barbecue grill to medium-high heat. Oil swordfish steaks and then season with salt and pepper. Grill until opaque in center, about 3-4 minutes per side. Serve with salsa.
Tropical Fruit Salsa
Combine all ingredients in large bowl. (Salsa can be prepared 1 day ahead. Cover and refrigerate.)
